ROASTED SWEET POTATO AND FIG KALE SALAD WITH MAPLE-CINNAMON CIDER VINAIGRETTE Roasted sweet potatoes and figs adorn this superfood kale salad. Topped with maple-toasted walnuts, pumpkin seeds and dried cranberries with an easy maple-cinnamon cider vinaigrette, this salad is a beautiful fall-inspired clean meal or side dish. This salad. …Also known as the time I ate two heads of kale in one sitting. It’s been a bit of a madhouse in my kitchen lately, with dishes and cooking tools strewn about on every available surface, and every Tupperware container and zip lock bag filled with food. I’ve been working on  the cookbook  (which is the object of all my affections right now…insert all the heart emojis here), and also have some new freelance projects lined up. Needless to say, I’ve been cooking up a tornado to ensure everything that needs to be square is squared before the man and I leave for Switzerland in October. Something about a ginormous clean salads keeps me energized and fo...

MEXICAN STREET CORN CHIPOTLE HUMMUS

MEXICAN STREET CORN CHIPOTLE HUMMUS Fully loaded Mexican street corn hummus with queso fresco, grilled corn, cherry tomatoes, red onion, black beans, and cilantro. The perfect healthy summertime snack or appetizer. I have a personal question to ask you. How do you handle the snacking situation?  Do you harbor snacks in the nooks and crannies of your purse, glove compartment, backpack at all times? Are you into energy bars/bites? Chips n’ dip? Fresh fruit and veggies? Something I don’t even know about? Tell me, I MUST know! I always admired my girlfriends in college who, at first mention of being hungry, would pull a granola bar or bag of chips out of their huge satchel and toss it in my general direction. Truthfully, I’m not ginormous on snacking, but when I do eat between meals or partake in the pre-dinner appetizer situation, it most assuredly is with a bowl of hummus and chips. What can I say? Nothing beats a good chip and dip, and I like to keep my snacks low-or-no-in-sugar – o...

PALEO SOUR CREAM & ONION DIP

PALEO SOUR CREAM & ONION DIP Creamy, zesty sour cream & onion dip made dairy-free, vegan, and paleo-friendly. This luscious dip is perfect for sharing with friends and family on game day! Every once in awhile, I make confessions about the foods I miss from way back before I started eating a restricted diet. Fudgesicles, Dulce de Leche Ice Cream, and Chocolate Sauce are near the top of the list, along with Pad Thai, Mango Cashew Chicken, and Thai Chicken Pizza. Thankfully with a little creativity, most of the foods I loved in my latter days can be replicated in a way my digestive system will accept. Enter: Sour Cream & Onion Dip. We are adding another make-it-paleo (or essentially make-it-real, or make-it-whole-food, or make-it-healthy…however you want to look at it)  recipe to the mix, because you guys: THE DIP. Do you love it? Historically, anything white and thick (think mayonnaise, cream cheese, any type of gravy, alfredo sauce, etc.) is on my no fly list mainly beca...
